Monday- Beef Fajitas in Crockpot
Wednesday- Beef & Bean Roll-Ups(recipe below)
Thursday- Baked Ravioli, Salad, French Bread w/Butter
Friday- Frito Chilli Pie, Pumpkin Bread
Dessert of the week: Banana Pudding Cheesecake & Pumpkin Drop Cookies (taking dessert to Bible study)
* Beef Roll-ups
1 lb. ground chuck
1 small onion chopped
cumin, salt, pepper, tiny bit chili powder
1 can refried beans or smashed leftover pinto beans
flour or corn tortillas, warmed in microwave
sour cream, cheddar cheese, olives
Brown seasoned meat with onions. Drain. Heat refried beans & tortillas. Place small amount of meat onion mixture on top of small amount of refried beans spread on tortilla. Top with cheese, sour cream & olives. Roll up and eat warm! So quick & so yummy!!
