1 & 1/2 c. ap flour
1/2 c. sugar or splenda
1 & 1/2 tsp. baking powder
1/2 tsp. salt
2 eggs
1 c. finely chopped onion
1/2 c. butter, melted
1 & 1/2 c. walnuts
In a large bowl, combine flour, sugar, b. powder and salt. In another small bowl, beat eggs, add onion and butter to blend; stir in dry ingredients just until moistened. Fold in walnuts. Fill greased or paper lined muffin cups 3/4 full. Bake at 400 for 20-25 minutes or until muffins test done. Let cool 5 minutes. Transfer to a wire rack to finish cooling. Eat warm with butter.
