Recipes, As Promised

My kids are both sleeping so I am taking advantage of doing this while I can! I don't know why blogger is acting so funny on me lately, now it's messing with the font. I can't get it to revert back to my original so I don't know how this is going to look. That bugs me SO bad!

We changed our menu around because Charlie didn't work Wednesday so we went to town together and grabbed some food while there. Not even worth mentioning, we were disappointed in the food. So, Thursday we took Claire to the doctor and had the sandwiches then. Oh, those wonderful sandwiches!!! Can't say enough about how good they were!!! Charlie REALLY loved them!!! So,yesterday about 8 am I put our giant Cook's Ham into the crock pot. Seasoned it with a little pepper and that was all. I cooked it on slow all day until about 12 pm and then I added 2 whole onions and 1 bag of baby carrots to the crockpot. I was supposed to add the cabbage, too but the ham was to big! So, I sauteed the cabbage in some butter and added salt and pepper (I did this about 15 minutes before time to eat supper) and made a pan of cornbread. We just added the cabbage in with the ham and veggies. Very tasty!!! This is our New England Boiled Dinner..Normally we make mashed potatoes and pour the juices (pot liquor) over them like gravy. Yum Yum!!!

Today I am cooking Blackeyed Peas with some of the leftover ham. I am going to fry some potatoes, and warm up the ham and we will eat that together with ketchup. We will have the blackeye peas and another pan of cornbread, alongside. OH IT WILL BE SO GOOD!!!!!

Tomorrow for Sunday dinner I will make marianated grilled chicken breasts and super salads. You place 4-6(boneless, skinless) chicken breasts in a large ziploc bag with:

1/2 cup soy sauce
1/2 cup pineapple juice
1/4 cup salad oil
1 tsp. mustard (dry or yellow, either one is fine)
1 tbsp. brown sugar
1 tsp. ginger
1 tsp. garlic salt
1/2 tsp. pepper

Place all ing. in large ziploc bag with chicken. Mash bag around very well to combine or add all ingredients to small bowl with lid, add chicken, make sure chicken is coated in ingredients. Refrigerate 24 hours. Grill over coals or on electric grill. (I have put this in the fridge about 8 am and cooked it about 5pm and it is still delicious! We dip the chicken in melted butter like you would lobster or crab!

Super Salads (basically everything you want on a salad: boiled eggs, croutons, deli meat (we will use leftover ham), sesame seeds, etc. We will have enough lettuce left over for another meal.

Sunday Supper: Mother in law's delicious Chicken and Rice dish. Very easy and very tasty.

1 fryer, cut up (we will use the chicken breasts that I have left over out of the 3 lb. bag I bought instead)

1 Cup Uncle Ben's Converted Rice
1 Can Onion Soup
1 Can Cream of Celery Soup

Put rice in bottom of pan. Arrange chicken on top. Pour soup over top, including the water as directed on the can. Cover and cook at 350 for about 1 hour or until chicken is done. Remove cover for the last 30 minutes so the chicken can brown.

Monday- Start a pot of beans in crockpot about 8 am and cook on low until about 3 pm. (We usually eat supper about 6:30 or 7 when my husband is working) Add 1 lb. of ground beef (already cooked and in the freezer), canned Rotel(tomatoes and green chilis) and 1 can chopped tomatoes, enough chili powder to season, garlic powder, red pepper, chopped onion. Sometimes I make it with Williams Brand Chili Seasoning(Hot) or add 1 can Wolf Brand Chili. You have to mess around with Chili to get it just right. Also, sometimes, we do not add beans and sometimes we use cube steak that has been cut into cubes, floured and fryed in hot oil. (Also sold as Chili meat or stew meat).* Edited: I cannot believe that I did not tell you how to finish making the chilli!!!! Add your seasonings, and cooked meat, tomatoes and rotel and onions to the crockpot with your beans. Cover and cook on low for 3-4 hours or until dinnertime. IF you make chili with no beans, do not worry about how long you cook it on low; my father-in-law had a heart attack the night we were making chilli for supper about 8 years ago; we had to drive 2 hours away to be with him right away and stayed gone all night. The chilli was cooked on low all that time; ate it about 4 pm the next day; best chilli we've ever had. But if you use beans, I wouldn't cook it that long; the beans will be mush.Make cornmuffins or cornsticks.

Tuesday- Take leftover chili beans ;Drain enough juice so that you get a moist consistency not a soggy taco or taco salad! Shred cheese, chop tomato and lettuce (from leftover salad fixings), add beans(do not need taco seasoning, because the beans are spicy enough already), sour cream and whatever taco fixings you like. Serve over corn chips, tortillas chips or fix hard or soft tacos. These are really yummy and easy! I am thinking that I will make this instead of burritos but maybe I will make those, we will have to see!

Wednesday- I don't know yet what I will fix, something easy though!
